Garlic Shrimp Recipe (Camarones al Ajillo)
When we visited Spain several years ago, I picked up these terra cotta cazuelas in different sizes. This week, I made one of my favorite Spanish dishes for dinner – Garlic Shrimp (Camarones al Ajillo). If you don’t have a cazuela, you can make this dish in a shallow baking dish.
Ingredients:
- 1lb shrimp
- 1/2 teaspoon Goya Adobo
- 1 teaspoon parsley
- 2 cloves garlic; sliced thin
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- A pinch crushed red pepper (optional)
- Salt & pepper to taste
Clean & Season Shrimp:
- If using frozen shrimp for this recipe, defrost in cold water. Remove from shell and clean well.
- Combine shrimp and ingredients in the cazuela. Stir well to combine.
- Arrange seasoned shrimp in a single layer in the cazuela.
Cooking Instructions:
- Preheat your oven in the low broiler setting.
- Place cazuela in the oven uncovered and cook for 15 minutes. If the shrimp are arranged in a single layer, you don’t need to turn them over.
You can serve garlic shrimp (camarones al ajillo) as an appetizer or as a main dish. It can be served as a main dish if paired with a caesar salad, white or yellow rice, or simple pasta (sautéed with olive oil, garlic and parmesan cheese). This is a simple flavorful Spanish dish which any shrimp lover can appreciate.
