Calamari Boil Foil Packet Recipe

Every year, my husband and I celebrate our anniversary by having a grown up dinner without the kids and one at home as a family.  I make one of our favorite meals and bring out the nice china to make our family celebration special.  This year, our 9th anniversary dinner was inspired by a Facebook post my cousin Magali shared for Shrimp Boil Foil Packets.  For my take on this dish, I decided to use calamari and added some Puerto Rican flavors (including adobo and paprika).  Here is my Calamari Boil Foil Packet recipe (try saying that three times).

Ingredients
  • 1 package of frozen calamari (found in my Stop N Shop frozen seafood section)
  • 2 cloves garlic, minced
  • 2 ears of corn, each cut into 4 pieces
  • 1 package of baby gold potatoes, cut into 1-in pieces
  • 1 shallot, minced
  • 2 tbsp. extra-virgin olive oil
  • 1 tbsp. Goya adobo
  • 2 tbsp. dried parsley
  • 1/2 tsp. paprika
  • 1 lemon, juiced
  • Salt and pepper – season to taste

You can enjoy this dish year round – outdoors on the grill or indoors in the oven

Cooking Instructions
  1. On the grill – Preheat grill over high heat. In the oven/broiler – Preheat broiler on low setting
  2. Defrost calamari and cut into rings. Season with adobo, salt and pepper. Let the calamari marinade while you prepare the rest of your ingredients
  3. Combine all the ingredients in a bowl and toss
  4. Cut 4 sheets of foil about 12 inches long. Divide ingredients evenly on half of each foil sheet
  5. Fold the sheets in half lengthwise and seal the long side. Then, fold and seal the top and bottom edges. Make sure the three sides are folded tightly so the juices don’t spill out
  6. On the grill – Place foil packets on the grill and cook for about 10-15 minutes. In the oven – Place foil packets on a tray and cook for about 20-25 minutes
  7. Serve immediately

This dish can be prepared with shrimp (like the recipe which inspired me) or a mixture of your favorite seafood.
