Easy Banana Bread Recipe
Sofia and Lucas love banana bread. They were introduced to banana bread by Mr. Dave, the chef at their daycare. It’s a healthy snack I make with the kids whenever we have ripe bananas. For this easy banana bread recipe, I start with a box of Pillsbury or Chiquita banana bread mix as my base, and add a few more ingredients to enhance the flavor.
Ingredients
- 1 box of banana bread mix. Add eggs, water, and oil based on package instructions
- 1-2 mashed ripe bananas
- 1 teaspoon of vanilla extract
- 1/2 cup of semi-sweet mini chocolate chips for mix, plus 1/4 cup to sprinkle on top
Note: some mixes have instructions for making bread and muffins. There is a difference in the consistency depending on which instructions you follow.
Baking Instructions
- Pre-heat oven; check temperature on package
- Don’t skip this step! It’s important when you’re baking to preheat the oven to reach the desired temperature
- Whisk wet ingredients in a large bowl
- Then, add dry ingredients in small batches to prevent clumping
- Scoop batter into cupcake liners (about 2 scoops per liner), filling halfway.
- Banana bread rises as it cooks, so you don’t want to over fill the cupcake liners
- Before placing in the oven, sprinkle the extra chocolate chips on top
- Bake the banana bread based on the time indicated on the packaging. Turn pan halfway through total baking time to ensure it’s baked evenly
- Remove from oven when they’re golden brown and a toothpick inserted in center comes out clean
- Let cool on a rack
I have to confess the first three banana breads are eaten warm since the kids and I will be patiently waiting for them to be ready. They are delicious!

- This easy banana bread recipe is a great activity for young kids, who like to help in the kitchen. It uses only four pantry ingredients and can be done in less than an hour from start to finigh
- By using bananas we might otherwise throw away, we’re teaching kids not to be wasteful with food. When my kids see ripe bananas, they think it’s time to make banana bread, not let’s throw these in the garbage
- The banana bread mix saves you time and money. I often buy several when they’re on sale since they’re non-perishable. If you’re not a baker, the mix is less expensive than buying individual ingredients which may go unused in your pantry
- I make individual cupcake-sized banana bread for the kids, because they are easier to pack for school snacks and portion control. Each kid will eat two maximum each day
- Adults also love these mini banana breads. I’ll serve them for brunch and often take them into the office to share with my team. They also make great hostess gifts
We’re busy moms. We’re allowed to take shortcuts, like using a mix to make homemade banana bread. Trust me, your family will enjoy this chocolatey delicious snack.
